- Ice-cold water: Mixed with tempura flour to create a light batter.
- Chili sauce: Adds a hint of spice.
- White pepper: Adds a gentle heat.
- Bouillon powder: Thai Rosdee brand, but you can also use a Western variety like Knorr.
Steps to cook:
- Make the batter. In a bowl, whisk together tempura flour, salt, white pepper, and chili sauce. Slowly pour in ice-cold water and mix until the batter is smooth but slightly runny. Keep the bowl over ice if you want it extra crispy.
- Coat the shrimp. Pat the shrimp dry with a paper towel. Dip it into the batter, making sure it’s fully coated.
- Gently lower the battered shrimp into a deep pan or wok with hot oil (170–180°C, 340–355°F) and fry in small batches until light golden and crispy.
- Drain the excess oil. Transfer the fried shrimp to a wire rack to drain. This keeps them crisp instead of soggy. Serve with your favorite dipping sauce on the side!

Thai Crispy Eggplant Fries
Ingredients:

- Eggplants – Choose firm, glossy eggplants without bruises for the best texture and taste. Long green Thai eggplants, Japanese eggplants, and Chinese eggplants all work well.
- Tempura flour – Creates the crispiest coating.
- Water – Use ice-cold water for an extra-light, crisp batter.
- Salt – Enhances the flavor of the eggplant and batter.
Steps to cook:
- Fill a large bowl with water and add a pinch of salt.
- Wash and peel the eggplants, then trim the ends and cut into evenly sized fries, about ½ inch thick.
- Soak them in the salted water for 10–15 minutes, then drain and pat dry with paper towels.
- In a mixing bowl, combine tempura flour, the ice-cold water, and 1/8 tsp salt.
- Fill a heavy-bottomed pan or wok with neutral oil and heat to 350°F (175°C).
- Dip a cut eggplant into the batter and let any excess drip off.
- Fry the eggplants in batches for 2–3 minutes until light golden. Remove and drain. Raise the oil to 375°F (190°C). Fry the eggplants again for 1–2 minutes until crispy and deep golden.
- Transfer to a wire rack or paper towels to let excess oil drain.
Serve hot with a dipping sauce!
Easy Thai Fish Sauce Wings
Ingredients:

- Chicken – Feel free to use whole wings, drumsticks, flats, or even chicken breast. If you love drumsticks, try these fried chicken drumsticks or Hat Yai fried chicken!
- Tempura flour – You’ve probably heard of cornstarch, rice flour, or baking powder for crispy wings, but we’ll use tempura flour! It gives an ultra-light, airy coating that fries up perfectly crispy without being too heavy.
- Ice-cold water – Mixing tempura flour with ice-cold water helps keep the batter light and airy, giving you that perfect crunch when fried.
- Fish sauce – This adds a salty, umami-packed flavor to the wings. I recommend using Megachef for its balanced flavor and lower salt content.
- Rosdee seasoning powder – This is a popular Thai seasoning, often used in Thai cuisine. It adds a savory, slightly salty flavor that enhances the taste of the marinade.
- White pepper
- Oil – Use oils with a high smoke point, like canola or vegetable oil, for deep frying.
Steps to cook:
- Combine fish sauce, white pepper, and seasoning powder in a large mixing bowl. Add the chicken wings after patting them dry with a paper towel to remove any excess moisture, and mix well with the seasonings.
- Add tempura flour and ice-cold water to the bowl with wings. Mix everything well, then let the wings sit for 20 minutes.
- Heat oil in a deep fryer or large pot to 350°F (175°C). Once the oil is hot, fry the wings in batches until they are golden brown and crispy, about 8–10 minutes per batch. Use a wire strainer or slotted spoon to remove them from the oil. Briefly place them on paper towels to drain any excess oil.
